Tender pork loin with sweet apple flavors, made quickly in the Instant Pot®. Perfect with mashed potatoes or rice and delicious pan gravy.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • ground black pepper to taste
  • 1 (2 1/2 pound) pork loin
  • 0.5 cup chicken broth
  • 0.5 cup apple cider
  • 0.25 teaspoon ground thyme
  • 0.5 cup applesauce
  • 1 medium yellow onion, quartered
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
Instructions:
  • - Preheat a multi-functional pressure cooker like Instant Pot® using the Saute function. - Heat up some olive oil. - Season the pork loin with garlic powder, salt, and pepper, then sear it in the hot oil on all sides for about 2 minutes each. - Take the pork out of the pot. - Pour in chicken broth and deglaze the pot, making sure to scrape up all the flavorful browned bits from the bottom. - Turn off the Saute function.
  • Add the apple cider into the pot and place the pork loin back in. Combine the ground thyme with the applesauce and spread it over the pork loin. Arrange the onion slices around the pork. Seal the lid securely, select High pressure, and set the timer for 25 minutes following the manufacturer's guidelines. Let the pressure build for 10 to 15 minutes before continuing.
  • Let the pressure naturally release following the manufacturer's guidelines for about 15 minutes. Then, unlock and lift off the lid.
  • Take out the pork and onion slices from the pot, then combine cornstarch and cold water in a bowl.
  • Activate the Saute function and blend in the cornstarch mixture with the pan juices. Allow to simmer until the gravy lightly thickens, for about 3 to 5 minutes. Serve the flavorful gravy alongside the pork loin.
