Make quick and delicious Instant Pot garlic mashed cauliflower as a flavorful and creamy side dish.
Ingredients:
  • 2 tablespoons butter, or more to taste
  • 2 cloves garlic, coarsely chopped, or more to taste
  • 1 large head cauliflower, finely chopped
  • 0.25 cup vegetable broth
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot®, on Saute mode. Melt butter, then add garlic and saute until fragrant for about 30 seconds. Add cauliflower and stir until coated and slightly tender for about 5 minutes. Pour in broth, lock the lid, select high pressure, and set the timer for 5 minutes. Let the pressure build up.
  • Follow manufacturer's instructions to release pressure naturally for approximately 3 minutes, then carefully use the quick-release method for about 5 minutes. Remove the lid, mash cauliflower with a potato masher or stick blender, and stir in Parmesan cheese. Season with salt and pepper to taste.
