Quick and flavorful roasted chicken dinner with homemade gravy, perfect with creamy mashed potatoes.
Ingredients:
  • 0.75 teaspoon salt
  • 0.75 teaspoon paprika
  • 0.5 teaspoon thyme
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon sage
  • 2 (10 ounce) boneless, skinless chicken breasts
  • 1 cup chicken stock
  • aluminum foil
  • 2 tablespoons cold water
  • 2 tablespoons cornstarch
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Mix together the salt, paprika, thyme, pepper, garlic powder, and sage in a small bowl.
  • Flatten the thicker end of the chicken breasts to about 1-inch thickness. Season generously and massage the seasoning into both sides.
  • Preheat a multi-functional pressure cooker like Instant Pot® on Saute mode, using high heat. Add olive oil and brown chicken breasts for 2 to 3 minutes per side. Transfer chicken to a plate. Pour chicken stock into the pot, deglazing any browned bits. Turn off the cooker. Place a trivet inside and arrange chicken breasts on top. Seal the lid, select high pressure, and set the timer for 5 minutes following the manufacturer's directions. Allow pressure to naturally release for 10 to 15 minutes.
  • Follow the manufacturer's instructions to release pressure naturally for 10 minutes. Then, switch to the quick-release method to release any remaining pressure for about 5 minutes. Unlock the lid, transfer the chicken to a clean plate, and cover with foil to keep warm.
  • In a small bowl, mix water and cornstarch until dissolved. Switch the pot to Saute function on medium heat. Gradually whisk in the cornstarch mixture until the gravy thickens to your liking. Season with salt and pepper. Take off the heat and pour the gravy over the chicken breasts to serve.
