Instant Pot Turkey Breast with Gravy: Quick, Easy, Perfect for Small Gatherings!
Ingredients:
  • 1 1/2 tablespoons unsalted butter at room temperature
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 4 teaspoons combination chopped fresh sage, rosemary, oregano, or thyme, divided
  • 1 skin-on, bone-in whole or split turkey breast (4 1/2 pounds or smaller), thawed
  • 1 tablespoon olive oil
  • 2 medium yellow onions, cut into 1/4-inch slices
  • 4 cloves garlic, peeled
  • 2 cups low-sodium chicken broth
  • 2 tablespoons all-purpose flour
Instructions:
  • Create the turkey seasoning by combining butter, salt, black pepper, paprika, and 3 teaspoons of fresh herbs in a small bowl.
  • Prepare the turkey: Trim any excess neck bone, rib bones, or extra skin from the turkey breast. Pat dry with paper towels and massage the butter mixture onto the turkey.
  • Heat olive oil in Instant Pot on Sauté setting, then cook onions and garlic until softened and browned, about 8 minutes.
  • Pour the chicken broth into the pot along with the remaining teaspoon of chopped herbs. Use a wooden spoon to deglaze the pot, incorporating any flavorful browned bits from the bottom.
  • Place the steam wire rack in the Instant Pot over the onions and garlic, ensuring the handles are facing up for easy removal. Then, position the turkey breasts on the rack.
  • Prepare the turkey breast in the Instant Pot by securing the lid and ensuring the vent is set to sealing. Choose the Pressure Cook or Manual setting and set the cooking time to 35 minutes at high pressure. Allow the Instant Pot about 15 minutes to come up to pressure before the cooking cycle initiates.
  • Release the pressure safely: Once the cooking program is complete, use heat-resistant oven mitts or a kitchen towel to carefully switch the vent on the lid from sealing to venting. Wait until the hissing stops, and the float valve sinks down. Then, open the Instant Pot and press Cancel to reset.
  • To ensure the turkey is cooked perfectly, insert a meat thermometer into the thickest part of the turkey breast. The temperature should read 165ºF or higher. If it's below 165ºF, seal the lid and cook on Manual setting at high pressure for an additional 5 minutes.
  • For crispy skin: - Air Fryer Lid: Place the lid on your Instant Pot. Select Broil at 400ºF for 10 minutes. Once done, press Cancel. - Oven method: Set the oven to high broil. Adjust the rack so the turkey is 6 to 8 inches from the heat source. Transfer the Instant Pot's stainless steel pot with the turkey to the oven. Broil for about 5 minutes until golden, checking to prevent burning.
  • Using heat-resistant oven mitts, carefully remove the turkey and wire steaming rack from the Instant Pot and transfer the turkey to a serving platter. If using the oven, return the stainless steel inner pot to the Instant Pot.
  • Create a luscious gravy: Sprinkle the flour over the onions and cooking liquid, then blend until smooth using an immersion blender. If needed, carefully transfer the mixture to a blender to achieve a smooth consistency, and return it to the pot. Simmer the gravy in the Instant Pot on the sauté setting for a minute or two until thickened, then turn off the pot.
  • Carve the turkey breast off the rib bones using a sharp knife, slice the meat into 1/2-inch slices, and serve with a generous pour of gravy on top.
