Instant Pot egg bites with air-fried sweet potatoes - a convenient and tasty make-ahead breakfast option.
Ingredients:
  • cooking spray
  • 1 cup diced peeled sweet potato
  • 1.5 teaspoons coconut oil
  • 1 teaspoon ground cinnamon, divided
  • 2 pinches salt, divided
  • 4 large eggs
  • 0.33333334326744 cup cottage cheese
  • 2 tablespoons liquid egg whites
  • 1 tablespoon half-and-half
  • 0.5 teaspoon vanilla extract
  • 1 (1 gram) packet low-calorie granulated sugar substitute
Instructions:
  • Preheat your air fryer to 375 degrees F (188 degrees C) and lightly coat the basket with cooking spray.
  • Mix sweet potato, coconut oil, 1/2 teaspoon cinnamon, and a pinch of salt in a small bowl, ensuring the potatoes are well coated. Transfer to the prepared basket.
  • Cook the potatoes in the air fryer until tender, approximately 10 minutes, remembering to toss halfway for even cooking. The cooking time may vary based on the size of the cubes. Once done, remove the basket and let the potatoes cool.
  • Once the sweet potatoes have cooled down, put eggs, cottage cheese, liquid egg whites, half-and-half, vanilla, sugar substitute, and a pinch of salt into a blender. Blend on high until the mixture is well-mixed and fluffy for about 1 to 2 minutes.
  • Grease a 7-compartment silicone egg bite mold. Fill each compartment with 1 tablespoon of sweet potatoes, then pour in the egg mixture, making sure to allow room for expansion. Cover the mold with foil.
  • In a multi-functional pressure cooker (like Instant Pot®), add 1 cup of water and place the egg mold on a trivet. Lock the lid, select high pressure, and set the timer for 8 minutes following the manufacturer's instructions. Let the pressure build for 10-15 minutes before opening.
  • Follow the manufacturer's instructions to release pressure naturally for 5 minutes. Then, use the quick-release method to release any remaining pressure for about 5 minutes. Unlock and remove the lid.
