Prawn bites with green goddess dip recipe

Perfect for hosting, make these make-ahead prawn bites for a stress-free party prep.
Ingredients:
  • 300g sweet potato, scrubbed, cut into 3mm slices
  • 18.20 gm olive oil
  • 2 avocados, halved
  • 70g (1/4 cup) whole egg mayonnaise
  • 2 anchovies, chopped
  • 40.00 ml chopped fresh tarragon leaves
  • 62.50 ml chopped fresh chives
  • 125.00 ml fresh continental parsley leaves
  • 1 lemon, rind finely grated
  • 10.60 gm, lemon juice
  • 12 medium peeled cooked prawns, deveined, halved lengthways
  • Finely chopped fresh jalapeño chilli, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 200C (180C fan forced) and prepare a baking tray by greasing it and lining it with baking paper. Lay out the sweet potato slices on the tray, drizzle with oil, and sprinkle with salt. Roast for 30 minutes, flipping halfway through, until golden brown. Let them cool on the tray before serving.
  • Combine avocado flesh, mayonnaise, anchovy, tarragon, chives, parsley, lemon rind, and juice in a food processor. Pulse until mixture is well blended. Season to taste.
  • Place the sweet potato slices on a platter. Add dollops of the green goddess dip and place the prawn halves on top. Sprinkle with jalapeño and serve with lemon wedges.
