Prawn cocktail pita bites

Pita prawn cocktail bites - a party favorite with a modern twist.
Ingredients:
  • 1 Lebanese bread round
  • Olive oil cooking spray
  • 1 small avocado, halved
  • 21.00 gm lemon juice
  • 40.00 ml hummus
  • 16 medium cooked prawns, peeled, deveined
  • 3 radishes, trimmed, cut into matchsticks
  • 16 small watercress sprigs
  • Sumac, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Trim the bread into a large square using scissors, then cut it into 16 smaller squares. Arrange the squares on a baking tray in a single layer. Spray with oil and season with salt and pepper. Bake for 6 minutes or until golden and crisp.
  • Transfer ripe avocado into a bowl. Gently mash it. Drizzle half of the lemon juice over it. Season with your preferred spices. Stir until well mixed. Next, spoon hummus into another bowl. Pour the rest of the lemon juice over it. Stir until fully combined.
  • Take each pita crisp and generously spread it with a creamy avocado and hummus mixture. Arrange the crisps elegantly on a large platter. Top them off with succulent prawns, crunchy radish slices, and fresh watercress. Finish by sprinkling the dish with aromatic sumac. Present and enjoy your delicious creation.
