Prawn and chorizo bites with spicy apple dip

Spice up your BBQ prawns with flavorful chorizo for a taste of Spain.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 1 green onion, thinly sliced
  • 1 tsp dried chilli flakes
  • 250g jar apple sauce
  • 57.20 gm honey
  • 2 chorizo sausages
  • 16 medium green prawns, peeled (tails intact), deveined
  • 40.00 ml chopped fresh coriander, plus extra leaves to serve
Instructions:
  • In a saucepan over medium heat, warm 2 teaspoons of oil. Sauté onion and chilli flakes for 2 minutes until onion is soft. Stir in apple sauce and honey. Continue cooking and stirring for 5 minutes until heated. Remove from heat, season to taste, and set aside.
  • Remove and discard the ends of the chorizo. Slice each chorizo into 8 pieces. Coat the prawns in the remaining oil. Alternate threading 1 prawn and 1 chorizo slice onto each skewer.
  • Preheat a barbecue grill or chargrill pan over medium heat. Grill skewers 2 to 3 minutes per side until prawns are tender and chorizo is golden and heated. Serve on a platter.
  • Pour the apple sauce mixture into a bowl and gently fold in the coriander. Serve the skewers with the apple dip topped with extra coriander for a flavorful touch.
