Mini Portuguese meatballs with spicy apple dipping sauce

Savor these irresistible meatball bites for a fabulous and memorable night.
Ingredients:
  • 3 chorizo sausages, chopped (see notes)
  • 250g medium green prawns, peeled
  • 1 egg, lightly beaten
  • 1 tsp lemon rind, finely grated
  • 500.00 ml panko breadcrumbs (see notes)
  • 1/2 small red capsicum, finely chopped
  • 3 green onions, trimmed, finely chopped
  • Extra virgin olive oil, for shallow frying
  • 2 x 140g tubs apple puree
  • 2.50 gm piri-piri seasoning
Instructions:
  • In a food processor, finely chop chorizo and prawns. Add egg, rind, and 1/2 cup breadcrumbs. Process until well combined. Mix in capsicum and half of the onion. Season with salt and pepper. Shape 2 level teaspoons of chorizo mixture into balls. Roll the meatballs in breadcrumbs until coated.
  • Add a generous amount of oil to a spacious frying pan, ensuring the base is fully covered. Warm over medium heat. Sear meatballs in batches, flipping them, until they are golden and fully cooked, which should take approximately 2 to 3 minutes. Remove and let drain on paper towel.
  • In a saucepan over medium-high heat, mix together the puree, piri-piri, and the rest of the onion. Bring to a boil, then lower the heat to simmer for 2 to 3 minutes until it thickens.
  • Present the meatballs alongside a flavorful dipping sauce.
