Prawn and watermelon bites

No-cook summer canapes bursting with fresh flavors.
Ingredients:
  • 20 cooked prawns, peeled, deveined
  • 1 garlic clove, crushed
  • 18.20 gm extra virgin olive oil
  • 1.5kg-piece seedless watermelon, rind removed
  • 150g goat's cheese
  • 20 fresh mint leaves
  • 20.00 ml sumac
Instructions:
  • Marinate the prawns, garlic, and oil in a glass or ceramic dish for 10 minutes.
  • Cut the watermelon into twenty 1cm-thick, 7cm-long triangles. Slice the goat's cheese into 10 pieces and then cut each piece in half to make 20 pieces. Top each watermelon triangle with a piece of goat’s cheese, a mint leaf, and a prawn. Sprinkle with sumac and arrange on a platter.
