Refreshing watermelon cubes elevate these prawn, feta, and cucumber skewers for a taste of summer in every bite.
Ingredients:
  • 1 continental cucumber, peeled into ribbons
  • 1/4 watermelon, cut into 2cm pieces
  • 24 Cooked Black Tiger Prawns, peeled leaving tails intact, deveined
  • 200g Tasmanian fetta, cut into 2cm pieces
  • 125.00 ml mint leaves
  • 80ml olive oil
  • 21.00 gm lemon juice
Instructions:
  • Skewer the cucumber, watermelon, prawns, and feta evenly. Present beautifully on a platter for serving.
  • In a blender, combine fresh mint, oil, and lemon juice until velvety. Season with a pinch of salt and pepper. Generously drizzle the luscious mixture over the skewers. Serve promptly to savor the flavors at their peak.
