Refreshing watermelon, succulent prawns, and aromatic mint combine for a perfect summer salad. Ideal for any gathering.
Ingredients:
  • 1kg medium cooked prawns, peeled, deveined leaving tails intact
  • 1/4 (about 500g) seedless watermelon, rind removed, thinly sliced
  • 125.00 ml small mint leaves
  • 200g marinated feta, coarsely crumbled
  • 1 lemon, zested, juiced
  • 36.40 gm Extra Virgin Olive Oil
Instructions:
  • Assemble prawns, watermelon, mint, and feta on plates. Top with lemon zest, then drizzle with lemon juice and oil. Season with pepper.
