Whip up this vibrant summer salad in no time!
Ingredients:
  • 1/4 (about 1.2kg) seedless watermelon, rind removed, cut into 1cm-thick wedges
  • 1.2kg (about 20) large cooked king prawns, peeled leaving tails intact
  • 200g feta, crumbled
  • 1/2 red onion, cut into thin wedges
  • 125.00 ml fresh mint leaves
  • 40.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 20.00 ml ouzo
Instructions:
  • Create the enticing ouzo dressing by whisking together vinegar, oil, and ouzo in a jug. Then, season with a pinch of salt and a dash of pepper to elevate the flavors.
  • Preheat a sizzling chargrill or barbecue grill until hot. Grill the watermelon slices for about 1 minute on each side until deliciously charred.
  • Plate the watermelon beautifully, layering it with succulent prawns, creamy feta, sliced onion, and fresh mint. Finally, generously drizzle over the tantalizing ouzo dressing and serve promptly.
