Chargrilled watermelon fattoush

Grilled watermelon fattoush salad is a vibrant summer staple, perfect as a main dish.
Ingredients:
  • 800g watermelon
  • 1 small lemon, halved
  • 1 Lebanese cucumber, thinly sliced
  • 4 radishes, trimmed, thinly sliced
  • 2 green onions, trimmed, thinly sliced
  • 250.00 ml fresh flat-leaf parsley leaves
  • 125.00 ml fresh mint leaves, large leaves torn
  • 1/2 x 120g packet smoked paprika chickpea crackers
  • 62.50 ml pistachio kernels, toasted, chopped
  • 100g fetta, crumbled
  • 20.00 ml pomegranate molasses
  • 21.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
Instructions:
  • Preheat a chargrill pan over medium-high heat. Slice the watermelon in half lengthways to create 2 wedges, then cut into 1cm-thick slices. Grill the watermelon in 3 batches for 1 to 2 minutes per side until lightly charred. Place on a large plate. Grill the lemon for 2 to 3 minutes until charred. Let the watermelon and lemon cool for 10 minutes before serving.
  • Prepare the Pomegranate Molasses Dressing by combining molasses, lemon juice, oil, salt, and pepper in a small jug. Whisk together until well combined.
  • In a bowl, combine cucumber, radish, onion, parsley, mint, and crackers. Place half of the watermelon on a serving plate and top with 3/4 of the cucumber mixture. Add the remaining watermelon on top, followed by the rest of the cucumber mixture. Sprinkle pistachios and feta over the salad. Drizzle with dressing and serve with charred lemon (see note).
