Refreshing prawn, watermelon, and feta salad for a light and satisfying dish.
Ingredients:
  • 200g Greek-style feta
  • 250g prawns (24), cooked, peeled, tails intact
  • 42.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 82.50 ml mint leaves, shredded
  • 1/4 watermelon
Instructions:
  • Remove the rind from the watermelon and slice the flesh into 1cm-thick wedges. Thinly slice the feta cheese.
  • On individual plates, artfully place watermelon and prawns. Top with crumbled feta, then generously drizzle with fresh lemon juice and olive oil.
  • Garnish with fresh mint and freshly ground black pepper, then serve promptly.
