Watermelon & fetta prawn cocktails

Refreshing watermelon, tangy feta, and succulent prawns create a delightful starter.
Ingredients:
  • 750g seedless watermelon, peeled, cut into 1.5cm pieces
  • 400g cooked prawns, peeled, leaving tails intact, deveined
  • 21.00 gm fresh lemon juice
  • 18.20 gm olive oil
  • Pinch caster sugar
  • 50g feta
  • Fresh mint leaves, to serve
Instructions:
  • Mix the watermelon and prawns together in a large bowl and set aside for later use.
  • In a jug, mix together lemon juice, oil, and sugar. Add salt and pepper to taste. Drizzle the mixture over the watermelon and toss gently. Transfer to serving glasses, sprinkle with crumbled feta, and garnish with mint before serving.
