Prawn and watermelon salad

Ingredients:
  • 2 limes zest and juice of
  • 12 raw prawns from sustainable sources, ask your fishmonger, peeled
  • 100 g unsalted cashews
  • 1 tablespoon sesame seeds
  • 1 small bunch mint
  • 1 red chilli deseeded and finely chopped
  • 2 handfuls baby spinach
  • 400 g watermelon seeds removed, cut into chunks
  • 4 spring onions finely sliced
  • sesame oil
  • sea salt
  • freshly ground black pepper
Instructions:
  • Combine lime zest and juice in a bowl, then marinate prawns in it. Toast cashews in a hot pan, then add sesame seeds until they start to brown. Crush nuts and add them to a mixing bowl with mint, chilli, spinach, watermelon, and spring onion. Stir-fry prawns in sesame oil until cooked, then toss with ingredients in the mixing bowl. Season with lime juice, sesame oil, salt, and pepper. Cherish the flavorful outcome! Optional: replace cashews with unsalted peanuts if needed.
