"Give a modern twist to a classic favorite with these mini prawn cocktail bites."
Ingredients:
  • 125g (1/2 cup) whole-egg mayonnaise
  • 20.80 gm tomato sauce
  • 12.20 gm Worcestershire sauce
  • 10.60 gm fresh lemon juice
  • 40.00 ml finely chopped fresh chives
  • 4-5 drops Tabasco pepper sauce, or to taste
  • Salt & freshly ground black pepper
  • 24 small butter lettuce leaves, washed, dried
  • 24 (about 1.2kg) medium cooked prawns, peeled leaving tails intact, deveined
Instructions:
  • In a bowl, mix together mayonnaise, tomato sauce, Worcestershire sauce, lemon juice, 1 1/2 tablespoons of chives, and Tabasco sauce. Season with salt and pepper to taste.
  • Divide half of the mayonnaise mixture over the lettuce leaves. Arrange prawns on top and drizzle with the rest of the mayonnaise mixture. Sprinkle with remaining chives, then transfer to a serving platter and serve right away.
