Impress your guests with this flavorful party appetizer!
Ingredients:
  • 1 Lebanese cucumber, seeded, diced
  • 1 long red chilli, seeded, thinly sliced
  • 20.00 ml roughly chopped fresh Thai basil leaves
  • 20.00 ml roughly chopped fresh coriander leaves
  • 40.40 gm coconut cream
  • 12.20 gm fish sauce
  • 10.00 gm caster sugar
  • 550g prawn
  • 40.00 ml roasted peanuts, roughly chopped
  • Coriander leaves, extra, to serve
  • Lime wedges, to serve
Instructions:
  • Mix together the refreshing cucumber, zesty onion, spicy chili, and fragrant basil and coriander in a bowl.
  • Combine coconut cream, lime juice, fish sauce, and sugar in a small bowl. Whisk together until smooth. Pour the mixture into the cucumber mixture and stir until well combined.
  • Spoon 2 teaspoons of cucumber mixture onto each spoon, then top with 1 prawn, a sprinkle of peanuts, extra coriander leaves, and serve with lime wedges.
