Thai-Chinese-inspired pinch salad

Exciting and flavorful Thai-inspired mini salads, perfect for sharing or serving as party appetizers.
Ingredients:
  • 5 cm piece of ginger
  • 1 fresh red chilli
  • 25 g sesame seeds
  • 24 raw peeled king prawns from sustainable sources (defrost first, if using frozen)
  • 1 pinch Chinese five-spice powder
  • 1 lime
  • sesame oil
  • 2 round lettuces
  • 50 g fine rice noodles
  • ½ a bunch of fresh coriander (15g)
Instructions:
  • Finely chop the ginger and slice the chilli. Toast sesame seeds until golden. Marinate prawns with five-spice, ginger, lime zest, and sesame oil. Separate lettuce leaves. Cook noodles, toss in sesame oil and lime juice. Add chilli, sesame seeds, and coriander. Stir-fry prawns and serve on lettuce with noodle salad.
