Vibrant Asian-inspired low-fat prawn and noodle dish bursting with flavor.
Ingredients:
  • 125ml (1/2 cup) fresh lime juice
  • 30.00 ml sambal oelek
  • 30.00 ml grated fresh ginger
  • 25.20 gm Coconut Oil
  • 1kg green prawns, peeled, deveined, leaving tails intact
  • 270g pkt dried soba noodles
  • 250g sugar snap peas
  • 1 bunch of broccolini, cut into thirds crossways
  • 125.00 ml fresh Thai basil leaves
  • Lime wedges, to serve
Instructions:
  • In a large glass or ceramic bowl, mix lime juice, oil, chili, ginger, and garlic. Melt coconut oil in a small heatproof bowl placed in a saucepan with boiling water, then add it to the lime juice mixture. Reserve half of the mixture in a jug. Add prawns to the remaining mixture, toss to combine, cover, and chill in the fridge for 30 minutes to marinate.
  • Cook the noodles in a big pot of boiling water for 2 minutes. Add the sugar snap peas and broccolini for another 2 minutes until noodles are tender and veggies are vibrant and crisp. Drain well and return to the pot.
  • 1. Drain the prawns and toss them in the reserved marinade. 2. Heat a frying pan over high heat, then cook half the prawns for 2-3 minutes per side until cooked through. 3. Transfer the cooked prawns to the pan with the noodles. 4. Repeat the process with the remaining prawns.
  • Pour the reserved marinade into the frying pan and bring it to a boil over high heat. Remove from heat and pour over the noodles, tossing until fully combined. Divide the noodles among serving plates, garnish with basil, and serve with lime.
