Thai chicken mini drums and green rice

Family-friendly mini drumsticks, only 378 calories per serving.
Ingredients:
  • 500g chicken mini drumsticks
  • 35g tube fresh Thai herb seasoning
  • 2 carrots, peeled, cut into thick matchsticks
  • 1 red capsicum, deseeded, thickly sliced
  • Extra-light olive oil cooking spray
  • 127.50 gm salt reduced chicken style liquid stock
  • 100g (1/2 cup) brown basmati rice
  • 250ml (1 cup) reduced-salt chicken stock
  • 1 zucchini, thinly sliced into rounds
  • 300g broccoli florets
  • 2 green shallots, thinly sliced
Instructions:
  • Preheat oven to 200C (180C fan forced).
  • Combine the chicken, Thai seasoning, carrot, and capsicum in a baking dish. Season generously and toss until everything is well coated. Lightly spray with oil.
  • After baking for 40 minutes or until golden and cooked, take the dish out of the oven and pour in the stock. Mix well, cover, and let it rest for 5 minutes before serving.
  • Prepare the green rice by bringing rice and stock to a boil, then simmer on low heat, covered, for 15 minutes until tender. Remove from heat, fluff the rice with a fork, then mix in zucchini, broccoli, and green shallot. Cover and let sit for 5 minutes. Fluff the rice once more before serving.
  • Enjoy the Thai chicken drumsticks alongside the fragrant green rice.
