Thai peanut butter chicken: Marinated in spicy garlic, soy, and ginger, finished with creamy peanut butter.
Ingredients:
  • 1 cup soy sauce
  • 8 cloves garlic, minced
  • 2 tablespoons hot pepper sauce
  • 1 tablespoon minced fresh ginger root
  • 2 pounds skinless chicken thighs
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 onion, sliced
  • 0.5 cup water
  • 4 tablespoons crunchy peanut butter
  • 2 tablespoons green onions, chopped
Instructions:
  • Combine soy sauce, garlic, hot pepper sauce, and ginger in a large bowl, ensuring they are well mixed. Add the chicken, coat evenly, cover, and marinate in the refrigerator for at least 1 hour.
  • Remove the chicken from the marinade, allowing the excess to drip off, and set aside the marinade in the bowl.
  • In a Dutch oven over medium-high heat, warm sesame oil. Stir in brown sugar until dissolved. Sauté onion for 5 minutes. Brown chicken evenly for about 5 minutes. Pour in water and reserved marinade, bring to a boil.
  • Lower the heat and gently simmer for 15-20 minutes. Incorporate the peanut butter, stirring until fully blended, then simmer for an additional 10 minutes. Place the chicken on a serving platter, pour the sauce over it, and finish with a sprinkle of green onions for garnish.
