Thai chicken, chilli and lemongrass bites

Host a chic girls' night with this sophisticated Thai chicken dish.
Ingredients:
  • 2 long red chillies
  • 500.00 ml shredded cooked chicken (see note)
  • 1 stick lemongrass, trimmed, thinly sliced
  • 2 garlic cloves, crushed
  • 4cm piece fresh ginger, finely grated
  • 21.00 gm soy sauce
  • 24.00 gm brown sugar
  • 125.00 ml fresh coriander leaves, torn
  • 125.00 ml fresh mint leaves, torn
  • 24 large baby spinach leaves
  • Fresh coriander leaves, to serve
Instructions:
  • Slice 1 chilli thinly. Remove and discard seeds and membrane from the other chilli. Slice thinly. Mix both chillies with chicken, lemongrass, garlic, ginger, soy sauce, sugar, and lime juice in a bowl. Cover and refrigerate for 2 hours.
  • Combine fresh and fragrant coriander and mint with the chicken mixture, followed by a generous seasoning of salt and pepper. Gently toss everything together to ensure all flavors harmonize beautifully.
  • Lay out spinach leaves on a platter, top each with a spoonful of chicken mixture, and garnish with fresh coriander leaves before serving.
