Delicious Thai chicken and rice noodle stir fry, sure to impress any crowd.
Ingredients:
  • 250g packet dried rice stick noodles
  • 27.60 gm oil
  • 500g chicken mince or pork mince
  • 2 cloves garlic, crushed
  • 2 stalks (1 tbsp) lemongrass, white section only, finely chopped
  • 1/4 - 1/2 tsp dried chilli flakes
  • 1 bunch baby pak choy, sliced
  • 36.60 gm fish sauce
  • 24.00 gm brown sugar
  • 65.63 gm lime juice
  • 62.50 ml coriander, chopped
  • 1 small red capsicum, thinly sliced
Instructions:
  • Cook the noodles according to the package instructions, then drain them. Trim the noodles with scissors if they are too long.
  • In a wok, heat the oil and stir-fry the chicken until beautifully browned, about 5 minutes.
  • Sauté garlic, lemongrass, and chili for 2 minutes. Toss in capsicum and pak choy, stir-fry for another 2 minutes. Mix in noodles, then pour in fish sauce, brown sugar, and lime juice mixture. Heat until warmed through. Garnish with fresh coriander.
