Delicious Thai rice noodle stir-fry with chicken, veggies, and savory Asian sauce - a flavorful complete meal!
Ingredients:
  • 2 tablespoons cornstarch
  • 1.5 tablespoons water
  • 6 cups chicken broth
  • 2.5 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chile-garlic sauce (such as Sriracha®), or more to taste
  • 2 teaspoons vegetable oil
  • 2 teaspoons minced fresh ginger root
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 (16 ounce) package thick rice noodles
  • 1 cup sliced zucchini
  • 1 cup sliced red bell pepper
  • 2 cooked chicken breasts, cut into 1-inch cubes
  • 0.25 cup crushed peanuts
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Combine cornstarch and water in a small bowl until smooth. Pour this mixture along with soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander into a large pot of chicken broth. Cover and bring to a boil.
  • Add rice noodles to the bubbling sauce, lower the heat to medium, and let them cook until tender, for 5 to 10 minutes. Mix in zucchini, red bell pepper, and chicken. Once it comes to a boil again, cover and simmer until the vegetables are just tender, around 5 more minutes.
  • Allow the mixture to sit off the heat, covered, for 5 minutes to thicken. Serve topped with crushed peanuts and cilantro.
