Thai chicken noodle stir-fry ready in 15 minutes for a quick, delicious dinner.
Ingredients:
  • 200g pkt egg noodles
  • 18.20 gm peanut oil
  • 700g Australian Chicken Breast Stir Fry
  • 400g pkt Coles Family Stir-Fry
  • 1 tsp finely grated ginger
  • 1 tsp minced garlic
  • 1 tsp chilli paste
  • 180g pkt Coles Thai Coconut and Lime Stir-Fry Sauce
  • 80g bean sprout
  • 40.00 ml cashews, toasted, chopped
Instructions:
  • Boil noodles in a large saucepan for 3 minutes until tender. Drain well, saving 1/2 cup (125ml) of the cooking liquid.
  • Heat oil in a hot wok or large frying pan, add half of the chicken, and stir-fry for 3 minutes until golden brown. Transfer to a heatproof bowl and repeat with the remaining chicken.
  • Toss chicken, vegetables, ginger, garlic, chili paste, noodles, stir-fry sauce, and reserved cooking liquid in a wok. Stir-fry for 2 minutes until veggies are tender and chicken is cooked. Top with bean sprouts and cashews before serving.
