Thai-style chicken bowl with rice, sprouts, cashews, and mango curry sauce for a delicious one-bowl meal.
Ingredients:
  • 3 cups water
  • 1.5 cups jasmine rice
  • 1 teaspoon salt
  • 3 skinless, boneless chicken breast halves
  • 0.5 cup soy sauce
  • 1 tablespoon water, or as desired
  • 1 (14 ounce) can coconut milk
  • 1 cup white sugar
  • 2 tablespoons curry powder
  • 1 mango - peeled, seeded, and diced
  • 2 cups clover sprouts, or to taste
  • 1 cup finely chopped cashews
  • 1 bunch fresh cilantro, finely chopped
Instructions:
  • In a saucepan, bring 3 cups of water, rice, and salt to a boil. Reduce heat, cover, and simmer until liquid is absorbed, approximately 15 minutes. Remove from heat and let sit until rice is tender, about 5 more minutes.
  • In a skillet, sizzle chicken breasts with soy sauce and 1 tablespoon of water over medium-high heat. Cover and cook, turning occasionally, until chicken is fully cooked, about 20 minutes. Dice chicken into cubes.
  • In a saucepan, mix coconut milk, sugar, and curry powder and bring to a simmer. Stir in mango and cook for about 5 minutes until heated through.
  • Place fluffy, aromatic rice in a bowl and generously heap on fresh sprouts, crunchy cashews, fragrant cilantro, and zesty green onions, along with succulent chicken. Lastly, drizzle the delectable mango curry sauce over the chicken for a burst of flavor.
