Quick and delicious Thai sticky sweet chicken wings - great for any occasion and ready in just 35 minutes!
Ingredients:
  • 1kg chicken wings
  • 1/2 lemongrass stalk (inner core only), finely grated
  • 1/2 garlic clove, finely grated
  • 10g ginger
  • 1 tsp dried chilli flakes
  • 100g golden syrup
  • 60ml soy sauce
  • 60ml rice wine vinegar
  • Coriander leaves, to serve
  • Chopped peanuts, to serve
  • Lime halves, to serve
Instructions:
  • Preheat the oven to 220C. In a deep baking tray, mix lemongrass, garlic, ginger, chilli, golden syrup, soy sauce, and rice wine vinegar. Add the chicken and coat thoroughly by tossing.
  • Roast the wings, ensuring they are coated in the sauce by turning them every 5 minutes, until they are sticky and golden, which should take around 25-30 minutes.
  • Garnish the chicken wings with herbs and chopped peanuts, and serve with a side of fresh lime for squeezing.
