Whip up a delicious high-protein, high-fiber stir-fry with lean chicken and fresh Asian veggies - a healthy, flavorful meal that's light on sodium and saturated fat.
Ingredients:
  • 18.20 gm peanut oil
  • 20.00 ml ginger, finely grated
  • 1 garlic clove, crushed
  • 20.00 ml lemongrass paste
  • 1 long red chilli (optional), finely chopped
  • 500g Chicken Mince
  • 1 bunch choy sum, shredded
  • 24.40 gm oyster sauce
  • 2 bunches broccolini
  • 2 spring onions, thinly sliced
Instructions:
  • In a wok or large frying pan, heat oil over high heat. Stir in ginger, garlic, lemongrass, and optional chili. Sauté for 1 minute until fragrant.
  • Cook the mince until it is fully cooked through, then add the choy sum and oyster sauce and stir-fry until wilted.
  • Boil the broccolini in a medium saucepan until vibrant green and al dente, for about 1-2 minutes. Drain thoroughly.
  • Place the broccolini elegantly on a platter, generously top it with the flavorful mince mixture, and finish with a sprinkle of fresh spring onions. Serve promptly to enjoy the delicious dish.
