Thai-style sausage rolls

Elevate classic sausage rolls with aromatic Asian spices.
Ingredients:
  • 4 slices of white bread
  • 750g chicken mince
  • 68.75 gm sweet chilli sauce
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 250.00 ml fresh coriander leaves, finely chopped
  • 3 sheets frozen puff pastry, thawed
  • 1 egg, beaten
  • 24.00 gm sesame seeds
Instructions:
  • Preheat the oven to 200°C. In a medium bowl, soak the bread in warm water just enough to cover. Let it stand for 5 minutes. Drain the bread and gently squeeze out the excess water to prevent meat from shrinking during cooking.
  • In a large bowl, combine bread, mince, onions, chilli, fish sauce, sugar, and coriander. Mix thoroughly.
  • Lay a sheet of pastry on a flat surface and cut it in half. Using damp hands, shape the mince mixture along one long edge of the pastry. Brush the other three edges with cold water. Roll it into a long sausage shape and cut it into five small sausage rolls. Press down slightly on each roll at 1cm intervals with the back of a knife. Brush with egg wash and sprinkle with sesame seeds. Repeat the process with the remaining pastry and mince mixture.
  • Place on greased baking trays, bake until golden and cooked through, then serve hot with sweet chili sauce for dipping.
