Thai-Style Chicken Satay

Grilled chicken satay marinated in peanut and soy sauce for a taste of Thai perfection.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup lemon juice
  • 0.25 cup peanut butter
  • 6 cloves garlic, chopped
  • 2 tablespoons curry powder
  • 1 tablespoon brown sugar
  • 1 teaspoon hot pepper sauce
  • 6 (6 ounce) skinless, boneless chicken breast halves, cut into chunks
  • 6 (10 inch) skewers
Instructions:
  • Combine soy sauce, lemon juice, peanut butter, garlic, curry powder, brown sugar, and hot pepper sauce in a large bowl until the marinade is well mixed. Add the chicken and toss to coat evenly. Cover with plastic wrap and chill in the refrigerator for 2 hours up to overnight.
  • Get your outdoor grill nice and hot, and give the grate a light coating of oil.
  • Thread the marinated chicken onto skewers after discarding the marinade.
  • Grill the chicken until it's juicy and fully cooked, around 5 minutes on each side.
