Taiwanese-Style Three Cup Chicken

Spicy three-cup chicken with soy sauce, rice wine, sesame oil, red chiles, and Thai basil for a burst of flavor.
Ingredients:
  • 1.5 pounds skinless, boneless chicken thighs, cut into chunks
  • 0.5 cup sesame oil
  • 10 slices fresh ginger
  • 2 cloves garlic, sliced
  • 0.5 cup Chinese rice wine
  • 0.33333334326744 cup soy sauce
  • 0.25 cup water
  • 3 tablespoons white sugar
  • 0.5 cup fresh Thai basil leaves
  • 3 dried whole red chilies
Instructions:
  • In a large skillet over medium-high heat, sizzle chicken in vegetable oil until beautifully golden on all sides, approximately 5 minutes. Then, transfer the chicken to a plate.
  • In the same skillet, warm sesame oil over medium heat. Stir in ginger and garlic, cooking until ginger starts to brown, around 30 seconds. Add back the chicken, rice wine, soy sauce, water, and sugar. Bring to a boil, then simmer on medium-low heat until liquid reduces to 1/4 cup, approximately 20 minutes.
  • Add the fresh basil and chiles to the mixture, then turn up the heat to medium and simmer until the liquid is nearly evaporated.
