Simple and flavorful chicken with savory umami Asian sauce.
Ingredients:
  • 40.00 ml sesame oil
  • 1kg chicken wing nibbles
  • 10 whole garlic cloves, peeled
  • 3cm-piece ginger, peeled, thinly sliced
  • 2 green shallots, chopped
  • 1 fresh red birdseye chilli, halved lengthways
  • 125ml (1/2 cup) Shaoxing wine (see Notes)
  • 60ml (1/4 cup) soy sauce
  • 125.00 ml fresh basil leaves (see Notes)
  • Steamed rice, to serve
Instructions:
  • In a large wok or deep frying pan, heat the oil over medium-high heat. Cook chicken in 2 batches, turning occasionally, until golden, about 5 minutes per batch. Transfer to a plate.
  • Lower the heat to medium. Sauté garlic, ginger, shallot, and chili in the wok for about 1 minute until fragrant. Mix in wine, soy sauce, and sugar. Add the chicken back to the wok, then reduce the heat to medium-low, cover, and simmer for 10 minutes as instructed.
  • Uncover and increase heat to medium. Cook for an additional 5 minutes or until the sauce slightly reduces. Stir in fresh basil leaves. Transfer to a serving dish and enjoy with rice.
