Effortlessly cook tender pork chops with flavorful apple cider gravy over creamy mashed potatoes in an electric pressure cooker.
Ingredients:
  • 2 (1-inch thick) bone-in center-cut pork chops
  • 1 teaspoon sea salt
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter, divided
  • 2 onions, sliced
  • 2 russet potatoes, peeled and cut into 1-inch cubes
  • 2 cloves garlic, crushed
  • 1 cup hard apple cider
  • 2 tablespoons Dijon mustard
  • 1.5 teaspoons maple syrup
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup hot milk
Instructions:
  • Place the pork chops, salt, thyme, rosemary, and pepper in a resealable plastic bag. Seal the bag and shake well to coat the pork chops evenly with the seasoning.
  • Preheat a multi-functional pressure cooker like the Fagor® on the Brown setting. Drizzle in oil, then add seasoned pork. Sear until golden brown on each side, approximately 5 minutes per side. Plate and set aside.
  • In a pot, melt 1 tablespoon of butter until sizzling. Sauté onions until golden and tender, about 8 to 10 minutes. Add potatoes and garlic, then nestle pork chops on top.
  • Combine apple cider, Dijon mustard, maple syrup, and nutmeg in a bowl, creating a sweet and tangy glaze. Pour this delicious mixture over the pork chops to infuse them with flavor. Seal the lid securely and select high pressure for 8 minutes, following the manufacturer's guidelines. Allow the pressure to build naturally for 10 to 15 minutes, enhancing the pork's tenderness.
  • Allow the pressure to release naturally for 5 minutes. Then, gently nudge the valve to release any remaining pressure more quickly. Finally, transfer the pork chops to a plate.
  • Using a slotted spoon, gently move the potatoes and onions to a bowl, keeping the delicious gravy in the pot. Add the remaining 1 tablespoon of butter and milk to the potatoes and mash until silky smooth.
  • Spoon mashed potatoes onto serving plates, top with 1 pork chop, and drizzle with gravy.
