Easy Smothered Pork Chops

Satisfying smothered pork chops: seared pork chops topped with onion gravy, served over creamy mashed potatoes.
Ingredients:
  • 2 tablespoons vegetable oil or lard
  • 4 center-cut pork loin chops, cut 1-inch thick (about 3 pounds)
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 large yellow onion, halved and sliced 1/2-inch thick
  • 2 cloves of garlic, thinly sliced
  • 3 tablespoons all-purpose flour
  • 3 cups beef stock
  • 1/4 cup heavy cream
  • 2 sprigs fresh rosemary
Instructions:
  • Sear the seasoned pork chops in a large skillet over medium-high heat with oil for 4 minutes on each side until dark golden brown. Transfer to a platter in batches if needed.
  • Sauté the vegetables: Cook onion and garlic in a pan over medium heat, stirring occasionally for 3 to 4 minutes until softened and golden brown.
  • Prepare the roux: Once the onions and garlic have cooked down until slightly glossy, sprinkle flour over the vegetables. If the onions lack glossiness, add 1 tablespoon of oil before adding the flour. Cook the flour for a minute to eliminate the raw, starchy flavor. Pour 1/4 cup of beef stock into the pan and use a spoon to scrape up the browned bits. The mixture will resemble a thick paste.
  • Complete the gravy by mixing the cream and remaining beef stock, then adding it to the pan along with the rosemary sprigs. Simmer gently, stirring regularly, until the gravy thickens.
  • Add the pork chops back to the pan, gently placing them in the bubbling gravy. Cover and let them simmer in the rich sauce for about 10 minutes, or until they reach an internal temperature of at least 145°F but no more than 165°F.
  • To serve, place the pork chops on top of creamy mashed potatoes and generously cover with the flavorful onion gravy.
