Easy weeknight smothered chicken with savory mushrooms, onions, and gooey cheese.
Ingredients:
  • 2 skinless, boneless chicken breasts
  • 0.25 teaspoon cayenne pepper
  • 1 pinch salt and ground black pepper to taste
  • 1 tablespoon butter
  • 1 (8 ounce) package chopped white mushrooms
  • 0.25 cup chopped white onion
  • 1 splash red wine
  • 1 pinch salt and cracked black pepper to taste
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect bake.
  • Season the chicken generously with oregano, cayenne pepper, salt, and black pepper before placing it on a baking sheet.
  • Place the dish in the oven that has been preheated for 15 minutes.
  • Melt butter in a nonstick skillet over medium heat. Saute mushrooms, onion, Worcestershire sauce, and red wine until vegetables shrink slightly, about 5 minutes. Season with salt and black pepper. Simmer over low heat until tender, 10 to 15 minutes.
  • Drizzle the savory mushroom mixture over the chicken. Bake until the chicken is fully cooked and reaches an internal temperature of at least 165 degrees F, about 8 minutes.
  • Cover the chicken with a generous layer of mozzarella cheese and cook until the cheese is golden and bubbly, approximately 5 minutes longer.
