Savory Italian-style pork chops with onions, garlic, tomatoes, and herbs. Perfect for pasta or mashed potatoes.
Ingredients:
  • 4 large pork chops
  • salt and ground black pepper to taste
  • 1 large onions, halved and sliced
  • 8 large garlic, minced
  • 2 (14.5 ounce) cans whole tomatoes
  • 3 tablespoons capers, with liquid
  • 1 tablespoon dried rosemary
  • 2 teaspoons red pepper flakes
  • 0.5 tablespoon dried oregano
  • 0.5 tablespoon dried basil
Instructions:
  • Preheat a large, heavy skillet over medium-high heat. Season both sides of the pork chops with salt and pepper, then sear in the hot skillet until golden brown, approximately 4 minutes per side. Remove from skillet and tent with aluminum foil.
  • In a hot skillet, sauté the onions and garlic until softened but still slightly crisp, about 5 minutes. Stir in the tomatoes, capers and liquid, rosemary, red pepper flakes, oregano, and basil. Simmer the sauce until the flavors meld together, about 5 minutes.
  • Transfer the flavorful pork juices from the plate into the skillet, mix gently. Place the cooked pork chops in the skillet and smother them with the luscious sauce. Let it all simmer until heated through, approximately 5 minutes.
