Greek-style green beans stewed in tomato and olive oil with potatoes. A hearty plant-based main dish straight from Greece.
Ingredients:
  • 0.25 cup olive oil
  • 1 small onion, grated
  • 1.5 pounds fresh green beans, trimmed
  • 4 medium tomatoes, pureed
  • 2 medium yellow potatoes, peeled and cut into wedges
  • 0.5 teaspoon salt, or to taste
  • ground black pepper to taste
  • 1 pinch white sugar
  • 1 cup water, or as needed
Instructions:
  • In a large saucepan over medium heat, sauté onion in olive oil until softened, about 5 minutes. Add green beans and cook until coated in oil. Stir in puréed tomatoes, potatoes, salt, pepper, and sugar. Pour in just enough water to cover the beans.
  • Partially cover the saucepan with a lid and simmer over medium-low heat until the green beans and potatoes are soft, about 25 to 30 minutes. Towards the end of cooking, uncover to thicken the sauce if needed.
