Quick and delicious Instant Pot® beef short ribs with veggies in a savory balsamic tomato sauce - perfect for busy weeknights!
Ingredients:
  • 2.5 pounds beef short ribs
  • 1 tablespoon garlic powder
  • 2 teaspoons kosher salt
  • 1.5 teaspoons ground black pepper
  • 2.5 tablespoons olive oil
  • 1 cup beef stock
  • 1 (6 ounce) can tomato paste
  • 2 carrots, coarsely chopped
  • 1 onion, coarsely chopped
  • 0.25 cup balsamic vinegar
  • 1 large portobello mushroom cap, chopped
  • 2 tablespoons water, or as needed
  • 1 tablespoon cornstarch, or as needed
  • salt and ground black pepper to taste
Instructions:
  • Coat short ribs generously with garlic powder, kosher salt, and pepper on all sides.
  • Preheat a multi-functional pressure cooker (such as Instant Pot®) on the Saute function as per manufacturer's guidelines, adjusting the temperature to 375 degrees F (191 degrees C) if available.
  • In a pot over medium heat, warm olive oil. Add short ribs and sear until they turn golden brown on all sides, approximately 2 minutes per side. Remove the ribs from the pot and place them aside.
  • In a pot, mix beef stock, tomato paste, carrots, onion, vinegar, and mushrooms. Stir until the tomato paste dissolves. Add the short ribs back to the pot, lock the lid, and select the Meat function following the manufacturer's instructions. Set the timer for 30 to 40 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for about 15 minutes. Unlock and remove the lid, then take out the short ribs and skim off any fat from the liquid in the pot.
  • Combine water and cornstarch to create a smooth slurry. Set pressure cooker to Saute mode and bring the liquid to a boil. Thicken the mixture by stirring in the slurry to your desired consistency. Season with salt and pepper, then add back the short ribs. Cook on low heat for an additional 5 minutes for the flavors to meld.
