Classic boiled chicken with old-fashioned noodle-style dumplings in a comforting soup.
Ingredients:
  • 1 (2 to 3 pound) whole chicken
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup hot chicken broth
  • 1 egg
Instructions:
  • In a large stockpot or Dutch oven, poach the chicken in salted water until it is fully cooked and tender. Remove the chicken from the pot, and shred the meat off the bones. Keep the chicken warm as you prepare the dumplings.
  • For dumplings, in a big mixing bowl, sift 2 cups of flour and 1 teaspoon of baking powder. Create a well in the flour, and pour in 1 cup of hot chicken broth. Mix with a fork and then use your fingers. Add the egg and mix thoroughly.
  • On a floured surface, quickly knead the dough, then divide it into 4 or 5 portions and roll them out thinly. Cut into 1 1/2 or 2-inch wide strips, then break into 2-inch long pieces. Add to boiling chicken broth and let simmer for 10 to 15 minutes. Serve alongside your prepared chicken.
