Louisiana-style chicken salad with zesty remoulade, spicy Tabasco, and Cajun seasoning.
Ingredients:
  • 1 pound skinless, boneless chicken breasts
  • Salt
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon cider vinegar
  • 2 teaspoons paprika
  • 1 teaspoon Cajun or Creole seasoning
  • 1 teaspoon prepared horseradish
  • 2 hard-boiled eggs , chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped green onion
  • Tabasco or other hot sauce to taste
Instructions:
  • Poach the chicken: Bring a 2-quart pot of well-salted water to a boil. Cut the chicken breasts into large (2 1/2-inch) chunks and add them to the pot. Reduce to a simmer, cover, and let sit for 15 minutes.
  • Prepare the dressing by combining mayo, mustard, vinegar, paprika, Cajun seasoning, and horseradish in a large bowl. Stir in the eggs, celery, green pepper, and green onion.
  • 1. Remove the poached chicken and dice it. Combine with other ingredients. Season with salt and hot sauce to taste. Chill before serving on butter lettuce or as a sandwich filling. Optionally save the poaching liquid as a light soup.
