Orange marmalade, almond and sultana bread and butter pudding

Indulge in warm orange bread pudding topped with creamy vanilla ice cream.
Ingredients:
  • 100g butter, at room temperature
  • 1 x White Sourdough Vienna loaf, sliced
  • 170g marmalade
  • 80g sultana
  • 6 Free Range Eggs
  • 500ml milk
  • 250ml thickened cream
  • 1 orange, zested
  • 110g brown sugar
  • 1 tsp vanilla bean paste
  • 20g almond
  • Vanilla ice-cream, to serve
Instructions:
  • Grease a 30cm x 20cm, 12-cup (3L) baking dish with butter and spread both sides of the bread with butter. Then, spread one side of the bread with marmalade and place it marmalade-side up in the baking dish. Finally, sprinkle with sultanas and you're all set!
  • Preheat the oven to 180C. In a large bowl, combine eggs, milk, cream, orange zest, sugar, and vanilla. Strain the mixture into a jug. Pour over the bread and press it down to soak in the custard. Let it sit for 20 minutes to soak.
  • Sprinkle the almonds over the pudding, then bake for 45 mins or until the custard is set and the top is golden. Enjoy with a scoop of ice-cream.
