Almond and marmalade glazed ham

Indulge in a festive maple-marmalade glazed Christmas ham for a delicious family meal.
Ingredients:
  • 7kg whole leg ham on the bone
  • 340g marmalade
  • 110g brown sugar
  • 125ml maple syrup
  • 23.40 gm Dijon mustard
  • 1 orange, zested, juiced
  • 70g almond
Instructions:
  • Preheat the oven to 180C. Using a small, sharp knife, cut around the ham about 8cm from the shank in a zigzag pattern. Carefully separate the rind from the fat by running the knife underneath and around the edge. Lift off the rind in one piece by gently sliding your fingers between the rind and the fat, keeping the fat intact.
  • Score the fat of the ham in a diamond pattern using a small, sharp knife. Pour 1/2 cup (125ml) of water into a large roasting pan and place the ham on a wire rack in the pan.
  • Mix the marmalade, sugar, maple syrup, mustard, orange juice, and zest in a small bowl. Brush half of the glaze over the ham before baking. Bake for 40 minutes, occasionally basting with the remaining glaze.
  • Mix the almonds into the glaze. Spread the almond mixture evenly over the ham. Bake for an additional 20 minutes or until the almonds are lightly toasted and the ham is caramelized.
  • Place the delicious ham on a lovely serving platter and elegantly slice it before serving.
