Start your day right with a warm citrus loaf topped with marmalade.
Ingredients:
  • olive oil cooking spray
  • 125g butter, chopped
  • 107.50 gm caster sugar
  • 2 eggs, at room temperature
  • 150.00 gm self-raising flour
  • 75.00 gm almond meal (ground almonds)
  • 187.50 ml 99% fat-free vanilla yoghurt
  • 260g mandarin
  • 1.25 gm ground cinnamon
  • 108.90 gm grapefruit marmalade, warmed
Instructions:
  • Preheat your oven to 180°C and generously grease eight 3/4 cup-capacity non-stick mini loaf pans with oil.
  • In a large bowl, use an electric mixer to cream together butter and sugar until pale. Add eggs one at a time, mixing well after each addition.
  • Combine flour, almond meal, yoghurt, mandarin, and cinnamon in a mixing bowl. Mix well until fully combined. Transfer the batter into the greased baking pans and level the tops. Bake in the oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack before serving.
  • Serve the dish warm with a dollop of marmalade on top.
