Orange, mandarin and grapefruit marmalade

Elevate your breakfast with citrusy homemade marmalade crafted from fresh oranges, mandarins, and grapefruit.
Ingredients:
  • 2 oranges, unpeeled, halved
  • 4 small mandarins, unpeeled, halved
  • 1 Ruby Red grapefruit, quartered
  • 1kg white sugar
Instructions:
  • Thinly slice the orange, mandarin, and grapefruit using a serrated knife, removing any seeds, and place the slices in a large bowl.
  • Pour 4 cups (1L) water into the bowl. Bundle reserved seeds in muslin and secure with kitchen string. Add to the bowl with the orange mixture. Let sit for 12 hours or overnight to soak.
  • In a deep saucepan over high heat, combine the orange mixture and bring it to a boil. Reduce the heat to medium, cover, and cook for 30 minutes until the rind softens. Add sugar and stir until it dissolves, about 5 minutes.
  • Turn up the heat to medium-high and bring the mixture to a boil. Cook and stir occasionally for 45 minutes or until the marmalade reaches the setting point. To test, chill a saucer in the freezer. Remove the marmalade from the heat and place a spoonful on the chilled saucer. Return it to the freezer for 1 minute. Check if the marmalade wrinkles and gels when you run your finger through it; if not, cook for another 5 minutes and repeat the test.
  • Remove the seeds using tongs. Divide the hot marmalade among warm sterilized jars and seal. Invert the jars for 2 minutes, then return them to an upright position. Allow the jars to cool completely.
