Thai-style citrus salad with lime and lemongrass vinaigrette recipe

Tantalize your taste buds with a zesty Thai citrus salad, a refreshing complement to any meal.
Ingredients:
  • 45g peanuts
  • 60ml lime juice
  • 60ml oil
  • 20.00 ml finely grated ginger
  • 20.00 ml thinly sliced lemongrass
  • 1 small red birdseye chilli, finely chopped (seeded if desired)
  • 7.50 gm caster sugar
  • 1 Ruby Red grapefruit
  • 3 oranges, peeled, sliced crossways
  • 3 mandarins, peeled, sliced crossways
  • 1 shallot, finely shaved
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
Instructions:
  • Mix the lime juice, oil, ginger, lemongrass, chili, and sugar in a small bowl. Add salt to taste and let the flavors meld together.
  • Peel and remove the white pith from the grapefruit using a small sharp knife. Cut between the membranes over a bowl to release the segments.
  • Assemble grapefruit, oranges, mandarins, shallot, mint, and coriander on a platter. Top with lime mixture and sprinkle with peanuts.
