Croissant pudding with marmalade glaze

French-inspired dessert with decadent sweet marmalade glaze.
Ingredients:
  • 4 Croissants, coarsely chopped
  • 625ml (2 1/2 cups) milk
  • 1 x 300ml ctn pouring cream
  • 100g (1/2 cup) caster sugar
  • 5 eggs
  • 170g (1/2 cup) mandarin marmalade
Instructions:
  • Preheat your oven to 170°C, then nestle the croissant into a 2.5L (10-cup) ovenproof dish.
  • In a medium saucepan over low heat, gently simmer the milk and cream. Remove from heat, then stir in the sugar until it dissolves.
  • In a large heatproof bowl, mix the eggs with half of the marmalade. Gradually combine the milk mixture, whisking until smooth. Pour the mixture over the croissants and let it rest for 10 minutes to soak.
  • Using a large roasting pan, carefully pour boiling water halfway up the sides of the dish. Bake until just set, for about 50 minutes.
  • Warm the leftover marmalade in a small saucepan on low heat for 1-2 minutes until melted. Brush the marmalade onto the pudding and serve promptly.
