Blueberry and white chocolate bread and butter pudding

Upscale bread pudding with croissants and white chocolate by renowned chefs Matt Preston and Michelle Southan.
Ingredients:
  • 1/2 tsp coriander seeds
  • 250ml (1 cup) pouring cream
  • 250ml (1 cup) milk
  • 2 tsp finely grated lemon rind
  • 70g (1/3 cup) caster sugar
  • 8.80 gm vanilla extract
  • 100g white chocolate, coarsely chopped
  • 4 croissants
  • 90g (1/4 cup) blueberry jam
  • 50g frozen blueberries, or fresh blueberries, plus extra, to serve
  • Sweetened condensed milk, to serve
  • Icing sugar, to dust
  • Sea salt flakes, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease a 2L (8 cup) ovenproof dish.
  • In a small frying pan, toast coriander seeds until lightly fragrant, about 2-3 minutes. Transfer to a mortar and gently pound with a pestle until slightly crushed.
  • In a saucepan over medium-low heat, combine cream, milk, lemon rind, and vanilla seeds. Heat until it just comes to a boil. Remove from heat and let it sit for 30 minutes to enhance the flavors. Pour the mixture into a jug and refrigerate until cool.
  • Whisk the sugar, vanilla, and eggs into the cream mixture, then gently fold in the white chocolate.
  • Slice each croissant horizontally into 1cm-thick slices (3-4 slices per croissant). Spread a touch of jam on each slice, then assemble the slices with a slight fanning effect.
  • Arrange the croissants in the dish and generously drizzle the luscious white chocolate mixture over them, ensuring it seeps between the layers. Let it sit for 10 minutes to absorb all the flavors.
  • 1. Spread a layer of fresh blueberries over the top of the dish. Set the dish in a large roasting pan and carefully pour boiling water into the pan, filling it halfway up the side of the dish. Bake for 25 minutes, or until the top is golden and the dish is set. Finish with a drizzle of condensed milk, dust of icing sugar, a sprinkle of salt, and a handful of extra blueberries on top.
