Apple, blueberry and white chocolate self-saucing pudding

Quick and easy microwave magic pudding recipe - no magic tricks needed!
Ingredients:
  • 60g butter, chopped
  • 169.95 gm milk
  • 2.20 gm vanilla extract
  • 225.00 gm self-raising flour
  • 107.50 gm caster sugar
  • 400g can apple sliced pie fruit, chopped (see Notes)
  • 82.50 ml frozen blueberries
  • Whipped cream, to serve (see Notes)
  • Blueberries, roughly chopped, to serve
  • White chocolate, chopped, to serve
  • 1/2 x 180g block white chocolate, finely chopped
  • 386.25 gm milk
  • 6.25 gm cornflour
  • 53.75 gm caster sugar
Instructions:
  • In a microwave-safe jug, combine butter and milk. Microwave on HIGH for 1 minute and 20 seconds, stirring halfway through, until butter is melted. Mix in vanilla.
  • Combine flour and sugar in a bowl. Mix in the milk mixture until combined. Gently fold in the apple. Transfer the batter to a 6cm-deep, 8-cup-capacity, microwave-safe dish. Smooth the top with a spatula and press the blueberries into the batter.
  • Prepare the Sauce: Combine white chocolate and milk in a microwave-safe jug. Microwave on HIGH (100%) for 2 minutes and 30 seconds, stirring halfway through, until the chocolate is completely melted. In a separate jug, mix cornflour and sugar, then slowly pour in the melted chocolate mixture, stirring until smooth and well combined.
  • Drizzle sauce over the back of a large metal spoon to generously coat the pudding batter. Place dish on an upturned microwave-safe plate. Microwave, uncovered, on MEDIUM (50%) power for 12 to 14 minutes or until a skewer inserted into the edge of the pudding comes out clean. Allow it to rest for 1 minute before garnishing with cream, blueberries, and white chocolate. Serve promptly.
